2 JOLLY EASY RECIPES | NOCHE BUENA BUDGET DISHES
Whipping healthy and filling dishes your family will enjoy need not be heavy on your budget. Like the simple dish of Chicken/Tofu Fried Lumpia (spring rolls) that my Mom cooks for a regular meal at home, for snacks or even as pica-pica for special occasions like Noche Buena or media noche. The lumpia is filled with a mix of healthy ingredients like ground chicken, tofu, mushrooms and carrots. It goes well with rice or can be eaten alone dipped in vinegar with chopped garlic. Frying the lumpia in canola oil is a healthy alternative as it is good for the heart and is known to be rich in Omega 3 and 6+.
I made a batch yesterday using Jolly Products from Fly Ace Corporation. Here are the recipes for my Jolly Easy Dishes, Noche Buena Budget Dishes :
Chicken/Tofu Fried Lumpia
3cloves garlic (chopped)
1/2bar tofu (diced)
Procedure: Sauté garlic, onions, tomatoes, ground chicken in Jolly canola oil until slightly brown. Add carrots, tofu and mushrooms. Season and mix well until cooked. Wrap the mixture in the lumpia wrapper as per the desired size.
For Frying: Heat Jolly canola oil in a pan and deep fry lumpia until golden brown.
If you are a soup person, here’s another recipe you may want to try using Jolly Cream of Mushroom Soup. It can do wonders to the simple dish making it creamy and taste so good. I had it for dinner the other night and even heated some leftover for breakfast. Enjoy this with garlic toast or stick bread. Here’s the recipe:
Creamy Macaroni and Mushroom Soup
3cloves garlic (minced)
200grams elbow macaroni
1cup shredded chicken (pre-boiled)
1celery stalk (diced)
1cup carrots (diced)
2cups chicken broth
1can Jolly cream of mushroom soup mixed with 2 cans water.
Procedure: Saute garlic, onions, chicken and celery in Jolly canola oil. Add broth, macaroni, carrots and Jolly cream of mushroom soup. Season with salt/pepper and cook until macaroni is al dente.
